Plans for the Week

Well, amazingly, I did it! I was able to post all 5 days this week! I'm so proud of myself for being able to accomplish this. I also cleaned up my closet and did some paperwork.

This week, I will hopefully be able to post all 5 days. I have more baking to do this week and I want to make some homemade creamsicle popsicles. I need to do some more paperwork and see if I have any time to clean anything else in my room.

This week's menu plan is:

Sunday: fish and rice
Monday & Tuesday: Ritz parmesan chicken(a new recipe), rice, and bacon vegetables
Wednesday & Thursday: garlic beef stroganoff, noodles, carrots and celery
Friday: homemade pizza
Saturday: my parents are coming for dinner and I didn't plan that meal yet

Here's the Ritz Parmesan Chicken recipe in case you want to try a new recipe too:

Mix 1/4 cup Kraft Mayonnaise(I'm using light) and 1 Tbsp. lemon juice; set aside.
In separate bowl, combine 25 finely crushed Ritz crackers(I'm using honey wheat), 1/4 cup Kraft Grated Parmesan cheese, and 2 tsp. dried basil.
Dip 4(I'm using 6)small boneless chicken breast halves in mayo mixture, then roll in cracker crumb mixture.
Place on a baking sheet.
Bake at 400 degrees for 20 min. or until chicken is done(165 degrees).
Makes 4 servings
