Plans for the Week

Well, this Monday is just about as busy as last Monday, but I'm posting at 7:40 PM, rather than 8:15 PM like last week! I need to find a way to do less things on Monday. Everything needs to be done on Mondays: laundry, errands, baking cookies, making pancakes/waffles for the week, making things for snack, and lots of updating new threads for the week on Etsy. I'm not sure what I can move to another day. I'll have to think about it.

Anyway, here is the menu plan for the week:

Monday & Tuesday - Ham macaroni and broccoli
Wednesday & Thursday - Sweet n' sour ribs, rice, cauliflower
Friday & Saturday - chicken meatballs, spaghetti noodles, and zucchini and carrots

I share the zucchini and carrots recipe with you because it's really delicious.

Zucchini n' Carrot Coins

1 pound carrots, thinly sliced
2 tablespoons margarine
1 small onion, sliced and separated into rings
2 small zucchini, cut into 1/4 inch slices
1/2 teaspoons dried basil
1/4 teaspoon salt
1/4 teaspoon pepper

In a large skillet, saute carrots in margarine for 4-5 minutes. Add the onion; cook for 1 minute. Stir in the remaining ingredients. Cover and cook for 4-5 minutes or until vegetables are crisp-tender.

Yield: 4 servings
