Plans for the Week

Now that this round of giveaways are over, I'll get back to my regular posts. As soon as I have another giveaway opportunity, I'll let you know. In the meantime, I hope you'll still comment on my posts. I will comment on yours too!

I'm so mad, last week, the kids had school off for President's week, so my daughter and I went to the eye dr. on Tuesday. They didn't have frames that would work for me, so she said she would order some and they would be here the next day. That was great because my daughter would be off school, so she could come with me and help me choose the frames, since I can't see without my glasses on to choose. Well, guess what? They finally called TODAY and said the frames are in for me to choose from! Well, my kids are back to school so there's no time to go look at frames. How frustrating!

Anyway, here's my menu plans for the week:

Mon. & Tues. - Spaghetti ham bake, cabbage
Wed. & Thurs. - Breaded ranch chicken, rice, asparagus
Fri. - Mac. & cheese bake

Here's the recipe for Breaded Ranch Chicken

3/4 cup crushed cornflakes
3/4 cup grated parmesan cheese
1 envelope ranch salad dressing mix
8 boneless skinless chicken breast halves
1/2 cup butter or margarine, melted

In a shallow bowl, combine the cornflakes, parmesan cheese, and salad dressing mix. Dip chicken in butter, then roll in cornflake mixture to coat. Place in a greased 13 in. x 9 in. x 2 in. baking dish. Bake, uncovered, at 350 degrees for 45 minutes or until chicken juices run clear.

Yield: 8 servings
